Summertime Sparkle ? An Easy Recipe For Elderflower Champagne

With summer finally reaching the shores of the United Kingdom, the populace is rushing out to make the most of the summer sun before the notoriously unpredictable British weather makes a sudden and dramatic change for the worse.

Although thoughts naturally drift to BBQ’s and beer, burgers and sausages, all washed down with gallons of cheap foreign beer, there are a growing number of people who are instead choosing a more sophisticated approach.

With the increasing popularity of all things natural and organic, more and more of us are choosing to grow our own foods and forage out in the wild larder for a free snack or accompaniment to a home cooked recipe.

A different approach to the traditional meaty barbecue and beer is the altogether different offering of home grown salads, fruit puddings and homemade wines to be enjoyed with friends and family. Many would say that the experience of sharing your home-grown and home-prepared food and drink with those closest to you provides a more fulfilling experience; if nothing more, a talking point of how, where and when the foods on offer can be found and used.

One topic that has always been popular with the majority of Brits is homemade alcohol. With tales of explosions in the garage and an end product that can strip paint from walls or power the next space mission to the moon, there has always been a dramatic side to this once popular pastime. With the economic crunch putting a squeeze on the amount of money people are prepared to spend on fancy beers and wines, a re-emergence of the home brew enthusiast as popular as in the 1970′s is upon us.

Elderflower champagne is one of the easiest and quickest of all summer beverages to make, perfect for those lazy summer days and evenings in the garden and ideal for a novice starting out on the home brew trail.

Elderflower is abundant in early to mid summer and easily identifiable by its flower and fragrance. With any wild food however, care should be taken to correctly identify what you are taking home to eat or drink. Do your research before heading out, and take pictures and a written description from a book or the internet to help you.

A quick search on the internet will turn up numerous versions of this light and refreshing homemade champagne, all of which can be tweaked to some degree or another to produce something personal to your own tastes, but here is one to get you started.

The following recipe makes around 6 litres, but if you like it and want to make more, just multiply the quantities.

Ingredients:

4 litres hot water
700g sugar
2 tablespoons white wine vinegar
Juice & zest of four lemons
Around 15 elderflower heads, in full bloom
Yeast may not be needed, as Elderflower contains its own, but if fermentation doesn’t start on its own, a pinch of yeast may be needed to kick start the process.

Method:

1. Put the 4 litres hot water and sugar into a large container and stir until the sugar dissolves. Top up with 2 litres of cold water so you have 6 litres in total.

2. Add the lemon juice and zest, the white wine vinegar and the Elderflower heads, then stir gently.

3. Cover with clean muslin and leave to ferment in a cool, airy place for a couple of days. Take a look at the brew at this point, and if it’s not foaming a little indicating that it’s beginning to ferment, add a pinch of yeast.

4. Leave the mixture to ferment, again covered with muslin, for a further four days. Strain the liquid through a sieve lined with muslin and decant into sterilised strong glass bottles with champagne stoppers or Grolsch-style metal swing tops, or sterilized screw-top plastic bottles (a good deal of pressure can build up inside as the fermenting brew produces carbon dioxide, so strong bottles and seals are essential).

5. Seal the bottles and leave your champagne to ferment in the bottles for at least one week before serving, chilled. The champagne should keep in the bottles for several months if they are stored in a cool, dry place.

To be on the safe side, it’s better to store the champagne in a cool shed or garage so that if any bottles do explode, you’re not left with a sticky mess to clear up around the house.

Lastly, sit in the garden with a bowl of fresh strawberries, preferably home grown straight from the plant, before your visitors arrive and take time to appreciate what you have created Enjoy.

Different Types of Stem Glasses

Stem glasses are referred to by various names. To some, stem glasses are called wine glasses, where as to others, they are dubbed as champagne flutes or even cocktail glasses. No matter the varying names, stem glasses are in the category of drink ware defined by their stems which are set on bases. All types of stem glasses are cataloged as stem ware. An archetypal facet to stem glasses are their tapered stems or trunk that divide the drinking bowls from the base. We will examine a few stem glass aspects in order to distinguish one stem ware from the other.

Stem glasses can be manufactured from different types of materials, ranging from ceramic, metal or glass. Typically, whatever materials are employed, stem ware will still attain similar magnitudes as the elementary steam glass dimensions. Some forms of stem glasses include margarita glasses, cocktail glasses, cordial glasses, brandy snifters, champagne flutes, chalices, goblets and wine glasses. Each form of stem glass possesses its own unique breadth.

Each type of stem ware has its own distinctive shape. The body of a champagne flute is slender and elegant, and best represents the quality of champagne displayed. Champagne coupes are more old school and hardly used anymore nowadays. You would remember seeing them in old movies in the hands of beautiful leading ladies bedecked in expensive jewels. A champagne coupe is typically shaped like a saucer with a shallow bowl, and is about 7 ½ cm tall with by and large a width of 8.5 cm.

Entrepreneurs Andy Schaidler and Brian Buchberger – both of suburban Wauwatosa WI – hosted the event to introduce local customers to their new e-commerce website and wide product line of specialty barware, cocktail-themed gifts and decor, drinking accessories, and apparel.

“We wanted to show the unusual, cool, and hard-to-find merchandise we offer” Schaidler explained, “and also wanted to throw a party celebrating what we expect will be an exciting new venture for us locally and nationwide”.

Apparently, the crowd agreed, placing orders totaling over $ 1000.00 that night alone. On display was a huge product selection including martini glasses, cocktail shakers, champagne glasses, ice buckets, wine glasses, serving ware, Guinness and Jack Daniels logo glasses, lighting and decor, flasks, wine chillers, corkscrews, and signature apparel featuring their trademark logo and slogan: “It’s Always Happy Hour Somewhere”. Door Prize gift bags of cocktail themed merchandise were given to three randomly-selected guests during the 3 hour event.

“We’ve always enjoyed looking for and finding special things for our own home bar collections”, Buchberger says, “So we figured this was an obvious choice for a small business. They always say you should work at what you love!”.    

The two got the business idea after attending classes offered this spring by Ebay University in Milwaukee and Chicago, and also from researching mail-order companies at the Milwaukee Public Library. After several buying trips to wholesale home furnishings and gift shows in Chicago and Dallas, they developed the concept of offering unique bar ware that isn’t usually found at the average home furnishings store, department store, or mass merchandiser. Work on their Ebay Store has already begun, and plans are underway for a Yahoo Store and affiliations with other on-line marketers such as Google’s “Froogle” and Amazon.com which offer 3rd party sales and shipping thru small entrepreneurs.

A new study of the New Year’s Eve plans of American wine lovers shows that while Champagne and sparkling wines still reign as the beverage of choice, expensive or special red and white wines will be a highlight of the evening for many.

The survey conducted by Wine Opinions asked 530 “High-End” wine consumers about their New Year’s Eve plans and beverage choices. Most of the survey respondents (52 percent) indicted they would be celebrating at home with family or a few friends, while 20 percent said they were going to the home of a friend. For those entertaining at home, 30 percent indicated they would serve Champagne from France and 50 percent said they would serve sparking wine from elsewhere. However, 61 percent of the respondents said their plans included serving an expensive or special bottle of red or white wine, compared to 34 percent planning to serve cocktails, 33 percent serving inexpensive wine, and 26 percent serving beer.

For those consumers going to the home of a friend, 37 percent planned to bring an expensive or special red or white wine, compared with 35 percent who planned to bring a sparking wine and 20 percent who planned to bring Champagne.

“The study really confirms that for wine lovers, New Year’s Eve is not just about Champagne, it’s the time to crack open those special bottles you’ve been saving,” notes Christian Miller, the Director of Research Operations for Wine Opinions. John Gillespie, the founder of Wine Opinions, added, “We also saw that among consumers planning to go out to restaurants on New Year’s, 70 percent said they would order expensive red or white wines by the glass or bottle, compared to 43 percent planning to order Champagne and 21 percent planning to order sparkling wines.”

Survey respondents were also asked which of several luxury Champagnes they would most like to receive as a gift. Dom Perignon was chosen by 31 percent of the respondents, with 15 percent each choosing Roederer Cristal and Veuve Clicquot “La Grande Dame.”
